It begins with a living levain
Each of our bakers keeps their own natural starter alive โ wild yeast and bacteria, fed day after day. It's what leavens the sourdough naturally, with no commercial yeast or chemical accelerants.
That living culture is what gives our loaves their character: a tangy depth of flavor that simply can't be faked.

Then it waits โ 24 to 36+ hours
Long, slow fermentation is where the magic happens. Over a day and a half or more, the dough develops a deep, complex flavor, a beautifully blistered crust, and an open, airy crumb.
Slower fermentation also makes the bread easier to digest. Good things, quite literally, take time.

Shaped by hand, baked in small batches
Every loaf is shaped by hand using traditional methods โ no factory lines, no mass production. We only work with bakers who hold every loaf to that same standard, then flash-freeze it right at its peak.
It's slower and it's harder. It's also the only way to send bread we're proud to put on your table.
Handling your bread
Simple habits that make every loaf taste exactly as it should.
Warming it
These loaves are fully baked but still deserve a hot oven. Preheat to 425ยฐF and place the loaf directly on the center rack. Whole loaves need 15โ18 minutes, baguettes 10โ12. Let it rest 15โ20 minutes before slicing โ the crust will crackle, the crumb will set. It's worth the wait.
Storing it
Wrap in a kitchen towel, linen cloth, or the bag it came in. The crust may soften a touch in plastic โ a quick toast brings it all the way back. Store at room temperature for up to 2 days, then reheat when ready.
Freezing it
Freeze what you're not eating today. Pull it out whenever you need it, warm in a 425ยฐF oven, and it comes back beautifully every time. Great bread should never go to waste โ with Breadwright, it never has to.
